  • Continuing with our Wild Ales & Fermentations segment, we wrap up with the final episode of the segment with part 3, where I chat with two US based guests, both with big accolades in the realm of beer science and that is none other than Lallemand East Coast Technical Manager Molly Browning and Dr Matthew. J Farber of University of Sciences in Philadelphia to discuss all things Spontaneous Fermentations in relation to Sour Beers.

    We cover some interesting ground including the sour beer boom both in the US, Australia and other countries, the different types of sour beers in the market, the unique back story of the Lallemand Philly sour yeast that was isolated in Dr Matthew J Farbers lab in Philadelphia, the different bacteria’s that contribute to sour beers, as well as the various approaches professional brewers are taking towards brewing sour beers in modern times.

    It’s a great chat with Molly and Matt, who both enjoy a beer during our discussion to share with the audience their wealth of knowledge and insights in relation to sour beers and spontaneous fermentations.

  • We continue with our Wild Ales & Fermentations segment, where I chat with brewery owners that are pushing the envelope in regarding to the unique types of beers they are producing and offering to the craft beer market.

    In part 2, I chat with Husband-and-Wife duo Alex & Yvonne Jarman from Botany based brewery, Slow Lane Brewing. Despite the name, Slow Lane, are quickly building a reputation within the brewing community especially here in Sydney on brewing and putting together some quality complex beers in the form of traditional European style beers.

    Having a barrel aged program, open fermentation practices and trying to brew true to the style by focusing on the fermentation side of their beers, the typical turnaround for beer in the tank to a customer’s glass is much longer than other modern-day lager & pale ale breweries, which is where Slow Lane derives its name from.

    Being open not much longer than 12mths, and battling with ongoing lockdowns and COVID restrictions, Alex and Yvonne have expertly navigated their new brewery business to some early day’s success, which much more to come I imagine.

    It’s a great chat with both of them, who explain their journey of opening up, their passions when it comes to brewing particular styles, and breath inspiration to other aspiring brewery owners who may be looking at offering a unique point of difference as well.

    In part 1, I had the pleasure of speaking with Marrickville based Brewery Owner of Wildflower Topher Boehm to discuss their unique brewing & beer offerings in relation to wild yeast and barrel aged blending.

    I was very much excited to have Topher on the podcast to discuss how he uses wild yeast that he has collected and cultivated over the years from the regional bushlands of NSW to express one-of-a-kind beers that not even the hardcore beer punters have experienced before.

    His childhood always evolved around making good food from scratch and learning to have a craft that can be perfected over time that should never be clouded or hurried by money or popularity and this reflects in his business philosophies with Wildflower.

    He is a big believer in starting small and scaling up organically within your means as he shares with the audience some very interesting business advice for those looking at starting a brewery, especially in regard to the unique business model they have established.

  • Today’s episode I chat with Michael Anderson from Aerofloat who are trade wastewater specialists here in Australia.

    The topic on wastewater has come up quite a lot within the BMAB community in relation to the types of wastewater treatment systems there are out on the market and what a brewery owners responsibilities are from a compliance perspective.

    In our discussion, Michael shares with the audience how the growth of the craft brewing industry is starting to catch the attention of local council & water authorities. He gives the audience a basic run down on what brewery wastewater is and why it is important, the differing compliance requirements brewery owners have depending on their local area or state, as well as urban breweries to those in regional areas.

  • Continuing on with Part 2 of our Gypsy Brewing segment, I chat with Founder & Owner Brad Walker of the Sutherland Shire based brewery, Sunday Road.

    Brad along with a number of other successful breweries, started out as a gypsy brewer before launching into his very own physical brewery.

    Beginning his journey in 2016, bouncing around a couple different breweries such as Wayward in Sydney’s Inner West and Illawarra Brewing Co down Wollongong way, Brad learnt his craft and built the Sunday Road brand via the gypsy brewing path for several years.

    In this episode, Brad shares his personal views and opinions of what gypsy brewing is, and what it isn’t, the differences between gypsy brewing today compared to when he and many other breweries started out down this same path, and he talks about his tough slog story of his gypsy brewing days, his learning and personal development about professional brewing, the business side of the brewing industry, plus all the challenges, mistakes, as well as successes leading up to the eventual opening up of his very own physical brewery.

  • To kick off our first interview episode of Series 2, we dive deep into the Gypsy Brewing model. Now, It was hot topic in series 1 and has since been a very debated one within the BMAB community.

    So this is part 1 of the Gypsy brewing segment, where I catch up with prominent Gypsy Brewers Adam Betts from The Edge Brewing Project in Victoria and Tony Dichiera from The Suburban Brew in South Australia.

    Now, both guests have been gypsy brewing for many years now, and both have different approaches and motivations of wishing to pursue the model when starting out their beer making business.

    In the episode we talk about their successes to date with gypsy brewing, their challenges, and their end goals with it all. We talk about what Gypsy brewing is and what it isn’t, some of the business operational considerations of it in regard to sourcing and developing a good relationship with the right brewery, as well as the key marketing and sales aspects a gypsy brewer must have up to scratch if they are going to make any dent in pursing the path as a brewer without a brewery.

  • Coming to the pointy end of the original series of the podcast, our second last episode to be exact. Today’s episode I meet up with Director of BSK Projects, Benedikt Schikora to discuss the services and benefits of engaging a Project Management firm to guide an aspiring brewery owner through the convoluted and intricate nature of a brewery project, from the concept design phase right through to commissioning and opening.

    BSK Projects are a highly regarded Project Management firm specialising primarily in hospitality, entertainment and retail sectors both here in Australia and Internationally. Benedict discusses the role of a Project Manager and dives into all the key steps and phases a project like a brewery build goes through and the complexities of each if you were to manage on your own.   • Not a topic or segment that I considered when starting this podcast. They can be applied to any business across practically any industry, but our episodes and conversations today are tailored and applied to life within a brewery’s business. More than just one topic, but I feel they all have an important role to play and they seem to interrelate and blend into one another, and that is People & Culture, Training & Safety within A Brewery and across the greater industry itself.

    In part 1 of the segment, I talk with Chief Brewer at 4 Pines Brewing Co, Chris Willcock. Chris has been working within the brewing industry for over 10 years now, and is well placed to share his experiences and insights of seeing a small family run brewery gain growth and momentum into a medium and large sized one to then eventually being bought out by the big boys, and not just once but twice in his brewing career.

    In this time, his gotten to see the work and team cultures change and adapt, the challenges a business experiences when it comes to dealing with growth, and how it’s systems and processes have had to evolve to become more formalised. Chris also is a qualified Master Brewer, being a pass student of the Institute of Brewing & Distilling, and shares further details on the important role the IBD has played in the formal training and development for brewers globally.

  • In this episode, I meet up with serial Beer Entrepreneur Rich Coombes from Kaddy. Having started other beer and cider ventures in the past, including Batlow Cider and Canberra’s Capital Brewing, Rich and other co-founder and former UBER Australia Head of Operations Mike Abbott, are streamlining the way suppliers and customers in the alcoholic beverages market interact with their B2B ordering platform Kaddy.

    In our chat we discuss how Kaddy works, and how it can help breweries to start dipping their toes into wholesale distribution. We also talk about the self-distribution and traditional distribution models and how the Kaddy platform combines the two creating an interesting hybrid way of doing business in the wholesale distribution space.

    A very interesting concept, and yet another example of how the rise of the Internet Economy and the digital tech world is disrupting and redefining industries in regards to the supplier, customer relationship and cutting out unnecessary middle men.

  • In this episode, I chat with Bryant Soorkia from Ready Set China who represents and imports a number of famous Australian beer brands into mainland China.

    Not a topic I thought I would cover, especially for those just starting their brewery building journey, but the opportunity to chat with Bryant presented itself and I am glad I did so. As craft is growing in Australia, so too an infant craft beer scene is picking up momentum in the largest economy in the world, China. Born and bred in Melbourne, Bryant has spent many years over in China. He is currently the North China Regional Sales Manager of 31Jiu, a beverage importer and distributor, and he also his own marketing consulting business Ready Set China which helps businesses outside of mainland China break into the market helping them with brand representation in a vastly differing consumer culture.

    In our chat we discuss the potential opportunities for Australian Craft beer brands to tap into the Chinese craft beer market, what the import regulations and conditions into mainland China are, the business & consumer culture differences between that of China and the Western world and finally some important infrastructure aspects a brewery should have in place before considering sending their beer overseas.
