  • Dacquoise: Layers of History, Flavor, and French Elegance

Today you should get ready to indulge in one of France’s most elegant desserts, the Dacquoise. In this episode of Fabulously Delicious The French Food Podcast, we uncover the rich history and culinary artistry behind this layered cake of almond and hazelnut meringue, whipped cream, and a buttery biscuit base. From its origins in the town of Dax in Southwest France to its evolution as a celebrated treat in French patisserie, the Dacquoise is a masterpiece that combines texture and flavor in every bite.
We’ll journey back to the 17th century, where this dessert made its royal debut at the court of Louis XIII. Created by Clément Lassagne to honor a triumphant duke, the Dacquoise was originally adorned with chocolate ganache, crème Chantilly, and candied violets. But the story doesn’t stop there—over the years, this dessert has inspired numerous variations, including the Marjolaine by the famed chef Fernand Point and nutty creations like Dacquoise Pistache and Dacquoise au Praliné.
In this episode, we’ll also dive into the technical aspects of making a Dacquoise, from perfecting the meringue layers to experimenting with fillings like coffee whipped cream and vanilla Bavaroise. Whether you’re a seasoned baker or a French pastry enthusiast, you’ll discover the secrets behind creating this timeless dessert. And along the way, we’ll clear up some common mix-ups, like the difference between a Dacquoise and the Italian Japonaise cake.
So, grab a cup of coffee or a glass of Armagnac—another treasure from the region of Dax—and join us as we explore the delicate, layered world of the Dacquoise. Whether it’s a classic recipe or a modern twist, this dessert proves that French pastry is an art form meant to be savored.

  • Abbaye de Belloc - Cheeses of France Series
Discover the unique story behind Abbaye de Belloc, a cherished semi-hard cheese from the French Pyrenees, crafted from the rare, rich milk of red-nosed Manech cows native to the Basque region. Regulated under France’s prestigious AOC (Appellation d’Origine Contrôlée) laws, Abbaye de Belloc is a part of the Ossau Iraty family of cheeses, renowned for its nutty, caramelized flavors and dense, creamy texture. Each wheel represents a centuries-old tradition and the dedication of the Benedictine monks who perfected this cheese.
In this episode, we journey to the Abbaye Notre Dame de Belloc, near the picturesque village of La Bastide Clairence, a gem of Basque heritage. Learn how the monks’ devotion to labor and prayer inspired their cheesemaking methods, creating a cheese deeply tied to its place of origin. From WWII resilience to agricultural development in the 1960s, Abbaye de Belloc's production reflects a remarkable legacy preserved through local partnerships and modern support.
Abbaye de Belloc’s production uniquely blends regional history with culinary artistry. After the monks turned cheesemaking over to a nearby creamery in the 1990s, Habitat et Humanisme, a French nonprofit, stepped in to ensure the abbey remained a hub for cheesemaking and community service. Today, young interns continue the work, crafting and aging each wheel under the abbey’s roof, honoring an ancient method while supporting affordable housing initiatives.
Indulge in the flavors of Abbaye de Belloc as we explore its exquisite pairing options, from robust wines like Pinot Noir to earthy Shiraz, which enhance the cheese's caramelized richness and nutty character. We’ll look at the terroir of the Champagne region—its chalky soil, climate, and unique geography—which creates the ideal environment for cultivating grapes like Pinot Noir, Pinot Meunier, and Chardonnay. We’ll also examine the story of the "accidental bubbles," once seen as a flaw but now the hallmark of Champagne’s magic. The pioneering contributions of figures like Dom Pérignon, who refined the wine-making process, and Madame Clicquot, the Widow Clicquot who revolutionized Champagne production with the riddling method, are explored in detail. Their work, along with advancements in glassmaking and secondary fermentation methods, helped transform Champagne into a coveted product across European royal courts and beyond. The journey doesn’t stop there—Champagne's rise as a global symbol of sophistication is also a testament to strategic marketing by houses like Moët & Chandon and Veuve Clicquot. Through clever branding and partnerships with high society, these producers embedded Champagne into the fabric of elite celebrations. Today, top houses still carry on this legacy, crafting blends that represent tradition, innovation, and impeccable quality, whether in sweet rosés or ultra-brut bottles. Finally, we touch on the worldwide impact of Champagne, from its stringent appellation laws to its presence in international markets, where it’s synonymous with celebration and luxury. With more than 300 million bottles produced annually, Champagne’s reach is global, and yet it remains distinctly French. Join us as we toast to Champagne’s enduring allure and discover what truly makes it a sparkling masterpiece worthy of celebration.Looking to deepen your culinary journey beyond the podcast? • In this episode of Fabulously Delicious: The French Food Podcast, we continue our series The Story of, where we delve into the lives of extraordinary French chefs from the past. This week, we focus on the life and legacy of Pierre Franey, a master of French cuisine who brought the flavors of Burgundy to kitchens across the world, including those in America. Born in the quaint village of Saint-Vinnemer in 1921, Pierre's passion for cooking was ignited by the rich culinary traditions of his homeland, and by the time he was just a teenager, he was already embarking on a journey that would take him to the heights of the culinary world.
Pierre Franey’s career is a remarkable tale of hard work, resilience, and a deep love for food. After honing his skills in some of Paris's most prestigious kitchens, Pierre crossed the Atlantic to work at the French Pavilion during the New York World's Fair. His talent quickly garnered attention, and he eventually rose to become a celebrated chef in the U.S., particularly known for his time as the executive chef at Le Pavillon, one of New York's most iconic French restaurants. Yet, it was his collaboration with Craig Claiborne of The New York Times that truly cemented Pierre's influence on American cuisine, with their partnership introducing French cooking to home kitchens across the country.
Throughout his career, Pierre Franey’s contributions to food went far beyond the kitchen. He was a pioneer in making gourmet French cuisine approachable for home cooks, through his popular column The 60-Minute Gourmet and his television shows. In this episode, we explore his journey from a small French village to becoming a household name in America, his influence on the way we cook and enjoy food, and the lasting impact he left on the culinary world.

  • Albert Roux, born on October 8, 1935, in the picturesque village of Semur-en-Brionnais, France, was destined to become one of the most influential figures in modern gastronomy. Raised in a family of charcutiers, his passion for food developed early despite the challenges his family faced, including the loss of their business. After moving to Paris, Albert's godfather, a chef for the Duchess of Windsor, introduced him to haute cuisine, setting the stage for his legendary career. His culinary journey took him from Paris to the elite households of England, where he honed his craft and gained the skills that would later revolutionize British dining.
In 1967, Albert Roux, alongside his brother Michel, opened Le Gavroche in London, a restaurant that would forever change the UK's culinary landscape. Le Gavroche became the first restaurant in the UK to earn a Michelin star in 1974, and by 1982, it had achieved three Michelin stars, a remarkable accomplishment. Throughout his career, Albert mentored some of the world’s most renowned chefs, including Gordon Ramsay and Marco Pierre White, earning a reputation as a visionary who could spot and nurture talent. His influence extended beyond fine dining as he ventured into charcuterie, catering, and even hotel management, solidifying his place as a culinary innovator.
Albert’s legacy goes beyond his restaurants. In 1984, he co-founded the prestigious Roux Scholarship, a competition that continues to shape the careers of young chefs in the UK. Additionally, his work with the Clink association, which provides culinary training to prisoners, highlighted his commitment to using food as a force for good. Albert Roux’s contributions to the culinary world have left an indelible mark, making him a true pioneer in both French and British cuisine. His influence continues to inspire chefs and food lovers around the world.
