Summary
In this episode of What The Fat, I sit down with Christina Curp, better known as Castaway Kitchen. At 29 years old and 2 years postpartum, Cristina hit rock bottom with her health. On top of an inflammatory skin condition she had lived with for years, Hidradenitis Suppurativa, she began to experience many mystery symptoms and inflammation, Cristina took to the kitchen to find wellness.
Using her culinary prowess and love of research, she began to discover the connection between her symptoms and the food she ate. This ongoing experiment birthed her blog, which is a collection of inventive, allergen-friendly, low carb, whole-food recipes that have helped her reverse autoimmune disease, lose weight, and take control of her own health and well-being.
The recipes were a hit on the internet and social media and The Castaway Kitchen was born! This opened doors to writing books and prompted her enrollment in the NTA program. It's been a lot of hard work, but for Christina, helping people has been worth it.

SummaryJames Ellington is the embodiment of the underdog. Even when his athletic career suffered due to a lack of sponsorships, he never gave up. James revolutionized the sponsorship game by securing his spot in the 2012 Olympics by selling himself for sponsorship on eBay.
He continued to secure his title as a powerful 100-meter relay sprinter by placing 5th in the 4x100 Meter Relay in the 2016 Olympics, 3rd in the IAAF World Relays in 2014, and 1st in the 2014 & 2016 European Championships (all for the 4x100 Meter Relays). His career was abruptly put on hold when a life-threatening motorcycle accident left doctors saying he may never walk, let alone compete, again. James powered through with the mentality of taking it one day at a time. In this podcast, James dives into how he overcame his injuries, his journey with keto to fix hormone imbalances, and how struggling as an underdog gave him the strength to overcome any obstacle.

Episode Summary
Move over Dos Equis guy, Iâve found a new most interesting man in the world. Gerard Powell, the founder of the Rythmia Life Advancement Center in Costa Rica, had to overcome years of delinquency, drug addiction, and depression in order to find his true purpose in life. Gerry discovered Ayahausca after a trip to Costa Rica, an experience recounted in his powerful book Sh*t The Moon Said. During this trip, he discovered the root of his behavioral problems and ended with him obtaining the blueprint to Rythmia, which would later become the #1 best-rated resort (in the world) on Trip Advisor. While Gerry details the numerous mistakes he made over the years, he explains that he hopes to be remembered as the guy who screwed up hundreds of times but, was able to completely change his life around. This is the time of year that people tend to slow down, but I believe in ramping it up. It is these last few days before the end of a decade that will separate those who will succeed and those who will fail. That being said, success without fulfillment is the ultimate failure. While I believe you should always give to those around you, no matter the time of year, this giving season does act as a healthy reminder to serve those around you. Service comes in many forms and may be as simple as a smile or words of affirmation. As this year and this decade come to a close, I encourage you to take care of yourself so that you can be both willing and able to serve those around you. Letâs finish off the year strong and embrace 2020 with a grateful heart and positive mindset.
