    Recipe: Make a spiced syrup. Finely grate an orange and lemon and mix with a ½ cup of sugar. Cling wrap and leave overnight to infuse. The next day add the citrus sugar infusion to a cup of water and heat gently. Add 2 cloves, 2 star anise, 2 pepper corns, 4 crushed cardamom pods and a stick of cinnamon. When the sugar has dissolved, put a lid on the pan and turn off the heat. Let the syrup steep for an hour. Once cool, filter and refrigerate the syrup.

    To a bottle of light fruity red such as a Pinot Noir, Gamay, or Grenache, I used a Dolan & Dunn, Mataro from the Barossa, South Australia. Add 2 shots of Grande Marnier and Cointreau, 2 cloves, 2, star anise, 2 pepper corns, 4 crushed cardamom pods and a stick of cinnamon. Add a chopped orange and lemon, then cover with cling wrap and let it sit overnight in the fridge.

    For the Sangria, pour half a glass of wine and ½ a shot of syrup to taste. Serve over ice, topped with soda water and a sprig of rosemary (optional). For the Vin chaude, warm the wine gently (do not let it boil) and then let it sit in the pan for 10 minutes. Add Serve in a mug with ½ a shot of syrup to taste and a cinnamon stick (optional).

    Chris has riff on a classic Martinez cocktail, which he calls a ‘Messy Christmas’.

    Recipe: 1 ½ shots of white rum (fat washed with butter, ginger, and cinnamon). 1 shot Maraschino cherry liqueur, and a dash of Vermouth Blanco. Serve in a chilled martini glass, with a glace cherry and ginger.
