I met Maxwell in 2012 during the UK Barista Championship, he owned a cafe in Bath, Colonna & Small's at the time.
I had heard a lot about it... This man who would have the audacity to recommend people not have milk with a certain coffee or to drink it a certain way!! Who was this man?!
Well... This man, Maxwell went on to win the UK Barista Championship that year and then won it again another twice over the next 3 years. He was a 3 time World Barista Championship Finalist and has gone on to completely change the world of coffee, not only in his role as an organiser in the competitions, but through writing his book on water and now The Coffee Dictionary... He has a roastery that is expanding at this very moment and also has developed Colonna Coffee and started a premium trend of beautiful coffee in capsules.

Andrew explains how he started off the Taylor street Baristas with his brother and sister and went on to open several cafes.
He was responsible for setting up the barista training and maintaining a consistent level of brilliance amongst his staff… a lot of Taylor Street trained baristas went on to do really well in competition.
The level of knowledge and skill that Andrew shares with his team is inspiring. Coffee prep, tea prep, roasting, disttribution… there’s not much Andrew hasnt taken part in in some way.

Hugh Kelly is a young and unbelievably talented barista.
Two times Australian National Barista Champion.
His talent is equaled only by his modesty and open mind to the world and ideas of specialty coffee.
It was an honour to be able to chat with Hugh as he returned from Melbourne after competing in and winning this years Australian Barista Championship.
Under the guidance of 2015 World Barista Champion and owner of ONA Coffee Sasa Sestic, Hugh has everything he needs to take on the World Title in Korea.
In this interview, we chat about how he started his journey in coffee and competition, and eventually how he went on to win the Australian Title.
He explains in quite some detail the methods of extraction used in some of his signature drinks and how he mixes and matches flavours...

The Gentleman Barista, James Nicholas from Mettricks coffee in Southampton.
Fresh out of competing in the UK Barista Championship, James chats about his preparing for the competition, designing a signature drink, hypnotising the judges by using a very well groomed moustache… And picking the right coffee grinder.
We take a few detours on this coffee chat but it is peppered with little jems of knowlege and coffee history…
One of my favourite bits of this chat is talking about the gentleman who stole an aeropress from one of the Mettricks shops as they were giving away free coffee to support charity and he ended up the starring on CCTV images that made it around the world in social media scrum…

In the most gorgeous Circular Quay in Sydney, in the Gateway Building is nestled a lovely little coffee gem, known as THE ESPRESSO ROOM...
In this little den of caffeine, only the best is served in the form of ONA coffee from the bat cave of brilliance itself in Canberra, The ONA ROASTERY!
At the head of this distribution of this devilish dark brew, here in Sydney, is the gorgeous Freya Crickmore, a lady with an outstanding passion for coffee and knowledge and patience beyond my sphere of understanding.
It takes a special set of skills to manage a cafe, and the team that revolves around the success of said cafe must be well taken care of, and Freya has these skills.
She shared with me a few of her tips and tricks as a barista, manager and people person... I hope I'm using that term correctly...
And what it's like working along side coffee legends such as Sasa Sestic & Hugh Kelly and how in sharing the passion for coffee it builds a beautiful and solid community of well energised, happy people...

Here we chat more about the history of the barista competition and unions that were put in place to govern over all the judging and competing.
It gets a little technical and historical but I love the fact that I can share this, it is so full of coffee gold.
