What if the secret to a better batch of beer started before fermentation ever began? By understanding the way water chemistry impacts the sensory quality of finished beer, and by analyzing fermentation and other data, brewers can control sensory aspects of their product like never before. Sennos put together a free eBook that breaks down water chemistry fundamentals every brewer should know — no fluff, just the fundamentals. Download Water Chemistry for Brewers at sennos.com

    Berkeley Yeast
Our Tropics yeast is based on a London Ale strain, but we added a new gene to its genome that codes for a unique thiol-releasing enzyme. The enzyme converts the precursors in barley to free thiols that smell and taste like passionfruit and grapefruit. It’s super clean. No off-flavors like burnt rubber or other sulfurous notes. Just tropical aromatics. You don’t have to do anything unusual either, like mash hopping. Just pitch dry Tropics and supercharge your hazy IPA.

  • Beer has been an important staple of humanity for millennia. But how was beer important to the American colonists starting a new life in a distant place? The colonies lacked the comforts and foods of their homeland. How did they adapt and through this adaptation, change the drink they loved so much? In this episode, we'll talk to British food historian Marc Meltonville about myths, foods, and brewing/distilling in both England and the newly formed United States.

We'll also speak with Genesee Country Village and Museum senior director Brian Nagel and Rohrbach Brewing Co president Joel Will about their collaboration to brew 18th and 19th-century beer recipes to keep these interesting beer styles alive today. This is the perfect episode of the podcast for this month as the United States celebrates its 250th birthday!

  • On this episode, you'll hear the remarkable story of Bass Pale Ale. This story begins at the dawn of the industrial age, and charts Bass’s rise as one of the first global brewing brands. Over the course of two centuries, its pale ales evolved to meet the times, and today we know Bass as one of Britain’s classic cask ales—a beer enjoying a current renaissance among the country’s pubs.

In many ways, in telling the story of Bass, we’re recounting the history of brewing in Britain over the past two centuries: its technological and industrial rise, the collapse that befell the giants over the past generation, and, perhaps, an encouraging revival.

You'll hear from Harry White, who started at Bass in the research and development department in 1977. He would become Director of Quality Assurance in 1989, and stayed with the company until 2007. Today he is the chairman of the National Brewery Heritage Trust in Burton Upon Trent. You'll also hear from Pete Brown, one of the most celebrated beer writers in the world and the author of over a dozen books, including his most recent, Tasting Notes – The Art and Science of Pairing Beer and Music.

It’s an amazing brewery and an amazing story, all befitting one of the world’s most iconic beers.

  • What if using less hops made beer more hoppy? In a series of trials one North Carolina brewery was able to prove, by using advanced hop products, thiol flavors could be boosted through efficient use of ingredients, rather than more-is-better. Better beer. Better efficiency. Lower cost. It’s a whole new way to use hops. And consumers are enthusiastic not only of the flavors, but also the lower price of the beer!

On this bonus episode, we are going to talk about thiolized flavor from advanced hop products. Host Don Tse talks with Hopsteiner and NoDa Brewing Company about how NoDa was able to use new products to achieve a unique flavor outcome.

    Guests
Chad Henderson is one of the founding members of NoDa Brewing Company. He started as the head brewer and became Co-Owner in 2014 after the company's 3rd year anniversary. Chad's focus with NoDa Brewing Company has been to produce exciting and consistent beer varieties while also looking at increasing brewhouse and production efficiency. Chad's innovation and product utilization have contributed to multiple awards and increased sales as well as inserting new styles into the market without jeopardizing NoDa's current portfolio.

Steve Bradt has enjoyed a long and rewarding career in craft brewing, beginning in 1989 at the newly opened Free State Brewing Co. in Lawrence, Kansas and now extending into the supply side as regional representative for Hopsteiner where a lifelong passion for hops gets a chance to grow in a new direction. Steve has established and maintained a strong relationship to the brewing community as brewer, beer judge, writer, and through service and leadership in the Brewers Association, Master Brewers Association of the Americas and Kansas Brewers Guild, as well as other organizations.

  • Without yeast, there is no beer. Yeast occurs naturally and for millennia, it operated mysteriously. After the invention of the microscope, scientists could see and start to isolate and control yeast. Now, thanks to new scientific developments, there are new yeast strains, designed to work better in current breweries, with current ingredients and to produce currently in vogue flavors.

There is probably no other area in brewing where science is making beer better.

  • On this bonus episode of the All About Beer Podcast, Don Tse interviews Sennos CEO and Founder Jared Resnick and Chris Baker the Director of Brewing Operations for Mother Earth Brew Co.

Fermentation is a black box. What exactly is going inside those tanks?

By continuously measuring gravity, pH, temperature, pressure, dissolved oxygen, conductivity and ambient temperature and ambient pressure, Sennos state-of-the-art sensors give brewers a look inside their tank, with a simple instrument that inserts through the fermenter’s sample port and stays in place with a standard tri-clamp.

This trove of data, coupled with Sennos’ app, gives brewers a movie of their fermentation instead of a handful of snapshots. Sennos promises better control of fermentations, proactive problem solving and better beer quality.

  • If you stop into most breweries and nearly any bar or restaurant in New England today, you’re going to see an IPA on the menu, and it will almost certainly be hazy. New England has one of the most distinctive beer cultures in the US. It wasn’t always like this, however. In fact, until about fifteen years ago, most New Englanders had never really encountered a hop.

The Alchemist’s Heady Topper, the subject of today's episode of One Iconic Beer. John Kimmich started The Alchemist in 2003 with his wife Jen, and within months was making a beer that many people credit as the first hazy New England IPA. It’s a funny thing about firsts, though. As we’ll hear in the interview, Kimmich is uneasy with this description. Heady Topper may have sparked a region-wide culture shift, but it doesn’t really resemble the beers that follow. Today we’ll hear the story of Heady Topper, why its fans think it’s so good, why it was the right beer at the right time, and how serendipity played a starring role in the form of a hurricane, a flood, and a new canning line.

In addition to John Kimmich, we’ll hear from Jason Alstrom, one of the co-founders of Boston-based BeerAdvocate. In the early days of the internet, the site became a nexus of discussion and organization and helped create the excitement that led to, among other things, the haze craze that would engulf New England. We’ll also hear from Andy Crouch, publisher of All About Beer magazine, and a writer who has covered the New England beer scene since moving there in the early 2000s.

    All About Beer
At All About Beer, we’re honored to share the stories that define the beer community, and we couldn’t do it without the generous support of our underwriting sponsors. Their commitment helps sustain independent beer journalism, allowing us to highlight the people, places, and passion behind every pint. Their partnership ensures these stories continue to inspire, connect, and celebrate the craft we all love. Join our underwriters today and help make an impact on independent journalism covering the beer industry.
