Annnnnnd we're back! Hey friends! I've been MIA due to LIFE. All good things but yes this episode was recorded back in the summer and now I've just launched it. I know, I know. But better late than never.
I've been wanting to get Chef Monique on my podcast for so long, and I'm so SO happy she said yes to being on the show. A little bit on the super impressive Chef Monique: A San Francisco native, Chef Monique Feybesse began her career in 2007 when she graduated from the California Culinary Academy and later joined the opening team at Madera restaurant at Rosewood Sand Hill and at Masa’s in San Francisco. In 2013, she booked a one way ticket to Copenhagen and earned a position at Geranium Restaurant under Bocuse d’Or Legend, Rasmus Kofoed. She later relocated to Paris as part of the opening team of Chef Yannick Alleno’s Pavillon Ledoyen, which earned three Michelin stars within their first year. Her resumé also includes Atera in New York and Ninebark in Napa Valley, when both were under Chef Matthew Lightner. After moving back to the Bay Area to start her family in 2016, Monique became Chef de Cuisine of Cavallo Point’s Murray Circle restaurant later running the culinary program at Robert Sinskey Vineyards. Monique was also featured in Bravo’s Top Chef Season 19 as one of the cheftestants in 2022. She now is focusing on building the brand of Tarts de Feybesse with Paul while enjoying watching her two young sons grow up.

So when Chef Martin Narisma (Food Editor for FEATR) said yes to me inviting him to be a guest on the pod, I couldn't believe it (I still can't lol).

With that said, my next episode is with none other than the brilliant Bettina Makalintal! I'm a huge fan of Bettina's work and can't wait to share this EP with y'all. Bettina was born in the Philippines and raised outside Philadelphia. She writes about food through the lens of identity, history, and cultural criticism, and is currently a senior reporter at Eater. She was previously a staff writer at Vice's Munchies and an associate print editor at Bon Appétit.

Hello foodie friends! This week's guest is Cat Tolentino, co-owner of Gemmae Bake Shop in Long Beach, CA. SO excited to have my friend Cat on the show since we can talk about food ALL DAY and have many similarities - both Filipinas, both USC Trojans (Fight On!), and both obsessed about Ube! In this episode, Cat and I talk about Gemmae's beginnings in Cavite, Philippines, setting up shop in Long Beach, Gemmae's longevity (Gemmae Bake Shop has been in the LBC for 30 years!!), co-owning the bakery with her Mom, and, of course, our beloved Filipino purple yam: UBE!
