On today's episode I am doing a rundown of a few favorites from the month of January, but also giving a sourdough update, my experience with true stretching and folding, so here's my
New Sourdough recipe:
100 g starter 400 g AP flour 275 g water 25 g avocado oil 8 g salt mix dough with a spoon and let autolyze for 1 hour perform 4 sets of stretch and folds, spaced 30 min apart let rise overnight baking.... I am still experimenting!Other January favorites:
