内容简介:
在这本书中告诉我们,很多食物中都含有一种叫作凝集素的不利于身体健康的蛋白,比如某些谷物、水果、蔬菜、坚果、豆类和奶制品。这些存在于谷物、植物表皮和种子中的蛋白质被植物用来抵抗外敌。一旦摄入了这种物质,它就会在你的身体里兴风作浪,制造各种炎症,从而引发肥胖《纽约时报》畅销书作者冈德里博士和其他严重的健康问题。
为了避开这种物质,冈德里博士提供了几种有效的应对方法:
吃蔬菜先去皮。大多数凝集素都存在于植物的表皮和种子中,给植物去皮或去除种子能够有效降低它的含量。
只吃当季水果。自然成熟的水果的凝集素含量Z低,所以在苹果、浆果和其他富含凝集素的水果自然成熟后再食用,可以最大限度地降低凝集素的摄入量。
多吃精米,少吃糙米。全麦谷物和外皮坚硬的种子可能引起消化问题,它们中的凝集素含量都很高。
他告诉我们,只要避开食物中的凝集素,就能获得真正的健康;即便不控制热量摄入、不运动,也可以拥有健康的身体和苗条的身材。
