    Who Is Keith Richards?

    Before venturing out on his own, Keith Richards worked under the direction of Frank Stitt at Highlands Bar and Grill. After several trips to Greece with his wife Amy, Keith wanted to bring Mediterranean flair to the Birmingham area. The first Taziki's opened in 1998, and it has been a success ever since. Keith served as President from May 1998 until December 2012 and then served as the Chief Franchise Officer from June 2012 till 2017. Keith has returned to manage the flagship market in Birmingham, AL, and continues to lead our culinary R+D and the HOPE project, Taziki's signature charity. Today, Keith and Amy and their two sets of twins live in Birmingham, AL, where Keith serves on the Shelby County Chamber Board and advances the cause of employing special needs students in Birmingham and across the country.

In addition to caring for their two daughters, Frances and Chapel, their mission is to shepherd and teach everyone “in all wisdom, that we may present everyone full-grown in Christ” according to the instruction of Colossians 1:28. Besides serving at the school, Francois has a podcast called “Spiritual Living with Francois Fineberg” and is currently authoring two books.

Ashley is a mom to three, "but usually four, often five". Additionally, Ashley is passionate about bringing people together over food, a passion she learned from her mother and grandmother. As a result of this passion, Ashley started a catering company out of her condo as a newlywed. Eventually, the catering company outgrew Ashley's small kitchen, and it became what is now known as Ashley Mac's. Ashley Mac's now has locations in Cahaba Heights, downtown Birmingham, Inverness, Riverchase, and Homewood.

    This week, Sophie Hudson joined The SavvyCast to discuss her new journaling devotional Grace Upon Grace. Sophie is an author and host of The Big Boo Cast. This book was written with older teenage girls in mind, due to Sophie's experience working with high school girls at Briarwood Christian High School. Sophie shares how to connect with young girls in a way that makes them feel safe and understood. She explains that she never goes into these relationships expecting to change the girls because that is the job of the Holy Spirit. Ouida's Squash Casserole Recipe: 10-12 medium-large squash 1 yellow onion, peeled and chopped in large chunks 1 cup chicken stock (optional) 2 Tbs. Kosher salt 2 tsp. black pepper 1 Tbs. sugar 1 stick butter, divided 4 oz. cream cheese ¾ cup sour cream 2 eggs, beaten 1 ½ grated cheese (freshly grated is best) 1 ½ cups Cheez-its, crushed Chop squash and onion. Put in Dutch oven and cover with water and chicken stock. Add salt, pepper, sugar, and 2 Tbs. of butter. Bring to a boil and then simmer about 20 minutes - until squash is fork-tender. Preheat oven to 375. Drain cooked squash/onion in a colander and use a potato masher or spoon to mash out as much water as possible. In a medium-sized mixing bowl, combine squash/onion with cream cheese, sour cream, cheddar cheese, and remaining butter. Mix well. Taste to adjust salt/pepper, then add beaten eggs. Pour mixture into a lightly greased 9x13 pan. Bake for 25-30 minutes (you want a tiny bit of brown around the edges), then top with crushed Cheez-its and bake for 5 more minutes. Let cool for 10 minutes before serving. Lindy, the founder and executive director of Unless U, shared why she started the nonprofit.     What Is Unless U?

    The inspiration for this amazing nonprofit is Lindy's brother Jordan. Lindy's brother Jordan has down syndrome, and her family found themselves at a crossroads once he finished his high school program. Frustrated by the lack of programs for adults with developmental disabilities, Lindy decided to start one herself. The Christian-based organization first opened in November of 2014 with 10 students enrolled. Today, Unless U creates a college-like environment for their students to continue their education, receive vocational training, and learn life and social skills. According to their website, Unless U "envisions a world where adults with developmental disabilities are not seen through the lens of their disability but rather through what they offer their community."

  • Jim and Wendy Coupland shared Jim's battle with breast cancer in this week's episode. While many people may typically think of breast cancer as something women suffer from, Jim's story is proof that breast cancer can affect everyone.

    Episode At A Glance:

    This week on The SavvyCast, Jim and Wendy Coupland joined me to share Jim's breast cancer story. Their daughter, Finlay Coupland, is the social media manager & podcast editor for Family Savvy. After I heard about their experience through Finlay, I knew the Couplands' story needed to be shared!

    Jim's Battle With Breast Cancer:

    After noticing a spot on the right side of his chest, Jim mentioned it to his doctor. Since it was not bothering him, Jim's doctor said it was probably just a cyst and was not concerning unless it began to bother him or get bigger. However, over the course of three years, Jim's doctor noticed the spot changing and decided to have it surgically removed, still thinking it was just a cyst. That being said, no one expected the pathologist to call back saying that Jim had breast cancer. After hearing this, Jim and Wendy went to UAB where they found out that Jim had Stage 2 breast cancer. Jim had a lumpectomy and then began his 20 rounds of radiation treatment. Thankfully, Jim's treatments worked and he is now cancer-free. Today he lives a full, vibrant life and is on medication to help prevent the cancer from returning.

From being given two months to live to now celebrating five years of remission, her story truly is a miracle.

    Who is Chris Bailey?

    Chris Bailey grew up in Birmingham, Alabama, and is an alumnus of Samford University. He has over 10 years of professional videography experience and helped create the SavvyCast. He is now a producer and editor for The SavvyCast, as well as the Founder and CEO of CSB Productions. Chris has worked on countless television and online productions including Chace Strickland and Sean Hobbs of Backyard Production, Emmy Award-Winning Documentary Director Michael Uys, The Juvenile Diabetes Research Foundation, and many other directors, videographers, organizations, and online personalities. Chris is drawn to stories and strives to use videography as a way to reveal the deeper story behind every project.

He shared his expertise on things like which foods to buy, what supplements are useful, and we even discussed kissing our dogs!
