Lemon-Hint Hamantaschen yield: 17 cookies
Ingredients: 1 1/2 cups GF oat flour 1 cup almond flour 1 tsp baking powder 1/4 cup olive oil 1/4 cup pure maple syrup Zest of 1 lemon 1 tablespoon lemon juice
Filling: Strawberry jam
Directions:
Heat oven to 350 F. To a mixing bowl add the dry Ingredients and mix. Next, add the wet ingredients to the dry ingredients and mix. Place the dough in a plastic wrap in the fridge for overnight or for at least 8 hours, to set. Take a parchment paper and lay on your working surface. Place the dough on top and cover with another piece of parchment paper, same size as the one underneath. (It should be approximately the size of your baking sheet) Take a rolling pin and roll the dough to about 1/5 of an inch. Take a round cookie cutter and cut circles. Take a spoonful of the filling and put it in the center of each circle. Then pinch together one side, and then fold in the other 2 corners to create a triangle. You can close it on top all the way, or you can leave it open at the top- it is up to you. Bake for about 10-15 minutes until golden brown in the edges. Let the cookies cool down completely, then serve.
Chocolate Orange:
Ingredients yield: 13-16 cookies
1 1/2 cups gf oat flour 1 cup almond flour 1 tsp baking powder 1 tsp cacao powder 1/4 cup olive oil 1/4 cup pure maple syrup Zest of 1 orange 2 tablespoons orange juice 1 tsp tahini
Filling: 1/2 cup chocolate chips 1 tablespoon coconut oil 1 tablespoon pure maple syrup zest of 1 orange
Directions for the filling: Add all the ingredients to a glass bowl and microwave for about 30 seconds until it is melted, mix.

Beejhy Barhany is an entrepreneur, and activist, who was born in Ethiopia, raised in Israel, and currently resides in New York. At a very young age she emigrated to Israel. She acclimated to Israeli life, living in a kibbutz and joining the army. Soon after she traveled across South America for a year, and again emigrated, this time to the US. She is the founder of B.I.N.A. Cultural Foundation non-profit dedicated to celebrating and advocating for Ethiopian Jews in North America. Today, she is the chef and owner of an eclectic Ethiopian restaurant, Tsion Café, that incorporates cuisine from the many places that have been influential on her journeys. Currently She's working on a cookbook.

Join us today as Emma interviews Dr. Heather Shenkman MD, FACC! Dr. Heather is a board-certified interventional cardiologist in practice in Tarzana, California. She graduated from Albany Medical College in 1999 at the age of 23 through a six-year combined BS and MD program. She completed a residency in internal medicine at Henry Ford Hospital in Detroit, and then cardiology fellowships at both the University of Rochester and Tufts University in Boston.
She is the author of âThe Vegan Heart Doctor's Guide to Reversing Heart Disease, Losing Weight, and Reclaiming Your Lifeâ. While Dr. Shenkman is skilled at performing invasive procedures to open blocked arteries of the heart, she is a strong advocate for a healthy lifestyle, including plant-based eating and regular exercise. She is also an avid athlete, having completed two Ironman triathlons and over 100 endurance events including triathlons, century cycling events, swim meets, and marathons. She is the mother of 4 year-old Ava.

He is an environmentalist with a background in systems engineering. Josh Balk is the co-founder and CEO of The Accountability Board. Previously, he was the Vice President of Farm Animal Protection at the Humane Society of the United States (HSUS) where he led the passage of a dozen state laws banning cages for egg-laying hens, mother pigs, and/or veal calves, including the historic California Prop 12 law, the strongest law in the world for farm animals. He also led corporate negotiations with the largest food companies to enact animal welfare reforms including with McDonald's, Walmart, Kroger, Wendy's, and more. Balk is also a co-founder of âEAT Justâ, the maker of Just Egg and the first company to ever sell cultivated meat in the world. Prior to his work at HSUS and co-founding EAT Just, he worked at Animal Outlook where he did undercover investigations at chicken slaughterhouses and factory farms.

He has a background in entomology and has worked with managing invasive species, integrated pest management (IPM) of vegetable crops, and pests and pollinators in urban agriculture. Originally from New York City, he hold an MS in Entomology from University of Wisconsin and PhD in Ecology/Evolution from University of Illinois-Chicago.

The first issue surrounding honey is the amount of effort it takes bees to produce. Some estimates suggest it takes one bee a whole lifetime to produce just one twelfth of a teaspoon of honey â considering the number of honey products available in any given supermarket, and the drastically declining number of bees worldwide, this seems like an unfair trade.
Beyond the effort it takes, large-scale honey production is usually not done with beesâ interests in mind. Some ethical issues which the Vegan Society identifies include:
Clipping the wings of Queen bees to prevent them from leaving a hive and artificially inseminating them Selectively breeding bees to increase productivity, which narrows the gene pool and leaves whole hives susceptible to diseases which they might not have any immunity to Replacing honey made in a hive with a sugar substitute which is not as nutritious for bees to eat Culling whole beehives post-harvest to keep farming costs downShamayim.us
