Payton Hoops is a long time adventurer based in Boulder, Colorado. Her love of the outdoors began at a young age when she would spend time hiking and camping with her family in the summers. Payton attended an expeditionary based high school where she discovered her love of backpacking, spending over 50 days in the Indian Peaks Wilderness and Mount Zirkel Wilderness between the ages of 13 and 17. When she graduated high school, Payton set out to complete the Colorado Trail thru hike, a 500-mile hike from Denver to Durango, Colorado. For the past decade, Payton has committed to sharing her love of the outdoors with youth, guiding multi-day trips in Colorado’s vast backcountry.
Now working a full-time job in the social impact sector, Payton is deeply grateful for any time she gets on the trails — hiking, biking, fly fishing backpacking, and skiing.
In this episode we talk about her experience hiking the Colorado Trail and the spectrum of emotions she went through, what expeditionary schooling is like, wilderness medicine resources and safety first and so much more.

Aaron Owens Mayhew is a registered dietitian and ultralight long-distance backpacker with nearly 20 years of experience as a hiker and nutrition expert. In 2017, she quit her job and began preparing for her first thru-hike. During this process, Aaron realized how uniquely qualified she was to plan and prepare meals for outdoor athletes and decided to put her skills to the test.
She founded Backcountry Foodie, an online ultralight recipes and meal planning platform, that same year. Since then, Aaron has dedicated her career to helping thousands of hikers enjoy delicious food and improve their performance in the backcountry. She focuses on ultralight, low-volume recipes and meal plans specially formulated for endurance athletes. Aaron and her husband, Chis, now run Backcountry Foodie from their Sprinter van while living in the wilderness full-time. Aaron truly loves creating delicious, functional backpacking recipes and sharing her knowledge with like-minded hikers!
